Awesome post! I'm so "local-grassfed-bison" myself. I buy as much as I can of it at a time. Even though I work in a very popular grocery store, I encourage my customers to shop for the bison at our farmers market, as well. I hope that all of these food scares surfacing help to change the way our food is supplied. We need to return to small, sustainable, local farms! The more there are, the less expensive it will be!

I'd like to question you regarding point 5 about antibiotics. I am a grass fed beef producer. Although we never use antibiotics for its growth promoting effect, we do use them in treatment of sick animals. The use is really fairly rare since animals on pasture are generally healthy. In addition, out of compassion I can't see allowing an animal to suffer unnecessarily. One solution is to remove a treated animal from the food chain, yet for small producers even one animal is a serious economic hit. Is there any reason a person should be concerned with the theraputic use of antibiotics?

My brother, who is a large animal vet, says no on the issue. I would say it is a discussion between the consumer and farmer. I would be okay with it.

My biggest concern with antibiotics is the constant non-terapeutic use that could lead to resistant strains of bacteria. This is the largest threat to us all.

No, as in no concern on limited therapeutic use being a problem. Sorry, needed to be clearer there!
